A massive Cromwellian manor house (once the summer residence of the Marquis of Lansdowne), this luxurious resort hotel stands in 300 acres of wooded grounds beside the cascading crystal waters of Sheen Falls. The airy, split-level restaurant – aptly named La Cascade – overlooks the rushing waters, and you can enjoy the scene by day or night thanks to floodlights. Astutely chosen local ingredients figure prominently, whether it's seasonal game or seafood from Castletownbere. The result could be dishes like roast squab pigeon with caramelised endive and orange essence, fillet of monkfish with aubergine purée, Provençal vegetables and bouillabaisse sauce or herb-crusted veal with tomato fondue. Desserts are highly skilled creations including milk chocolate cremeux with pecan brownie and 'crystalline' of chocolate.
Sheen Falls Lodge is home to Ireland's largest public wine cellar and the wine list is a bewildering tome of epic proportions, with at least 17 countries represented; fast-track your way through the whole thing by homing in on the sommelier's selection.
